Summer salad: lettuce, red cabbage, cucumbers, cherry tomatoes, sliced almonds, raisins. Dressing: Goat cheese, honey,extra virgin olive oil and white wine vinegar.
Back to making some food. Spinach salad with blueberries, walnuts and goat cheese with berries dressing.
So today we had to eat leftovers so I had to figure out a way to make the salad from yesterday more interesting. I decided to add a little bit of shrimp cooked in white wine and ginger and I added toasted sesame seeds and carmelized onions.
Today I made this: It’s a salad with red beets, cantaloupe, corn cucumber and cottage cheese, with a touch of balsamic. Nothing fancy but it was good!
Roman salad. I missed real Mozzarella di Bufala, especially in the summer…
